These are so easy and very impressive to serve to guests - bacon and egg muffins make a perfect brunch food or snack. I love that these muffins are very easy to make, and all the ingredients in them constitute, basically, a classic breakfast. If you want a delicious, fun idea for a quick breakfast, it will cover all the bases. What a fun idea!
Ingredients
6 eggs
6 slices of bacon
2 slices sandwich bread
parmesan cheese to taste
salt and pepper to taste
Dried parsley to taste
Directions
Preheat oven to 400 degrees.
Cut the sandwich bread into 1/3 inch squares.Spray a muffin pan with cooking spray and lay the bread into the bottom of each muffin cup. Line the inside of each muffin cup with a slice of bacon - If you like crispy bacon, cook over medium heat about 4 minutes in a skillet before putting it into the muffin cup. Crack an egg in each cup and season with salt and pepper to taste. Bake them for 10-15 minutes.Sprinkle the tops with parmesan cheese before serving.

Simple Brunch
Make this. It will change your life. It's the perfect brunch in my opinion. So, start your morning with avocado and you’ll be able to handle anything that comes at you for the rest of the day. You’ll be invincible.
And add a little bit, I recommend poached eggs to be added to just about everything. You can also add your favorite fresh herbs and even some sauce if you like, get crazy with it.
Ingredients
1 avocado
2 fresh eggs
1 slice whole grain sandwich bread
1 t chopped onion
salt, pepper and lime juice to taste
some tomatoes or lime (optional)
dried parsley to taste
Directions
Crush avocado by fork and add salt, pepper, chopped onion and lime juice and set aside.
Make poached eggs.
Toast sandwich bread.
Spread avocado mixture on the bread and top with poached eggs.
Sprinkle dried parsley and serve with sliced tomatoes or lime.

Eggs Benedict
I sometimes enjoyed cafe menu at my home.
Today, I tried the hollandaise and poached eggs for the 1st time ever ... it was absolutely wonderful.

Homemade Quiche
To celebrate my friend's pregnancy I made a quiche.
I couldn't decide between broccoli and mushroom, so I combined them into one. Great!
I used bacon, onion, mushroom and broccoli. Depending on your tastes you can use other ingredients like asparagus, spinach, sweet corn and potato....
Ingredients
1 Cup Broccoli, chopped
1 Cup Mushroom, sliced and stir-fried
1/4 lb Bacon, cooked and crumbled
1/2 Onion, sliced and stir-fried
1/2 Cup Heavy Cream
1/2 Cup Milk
1 1/2 Cups Shredded Parmesan Cheese
3 Eggs, beaten
1 Frozen Pie Crust, thawed
Salt and Pepper
Directions
Preheat the oven to 375 degrees F.
Combine eggs, milk, cream, salt and pepper.
Layer mushroom, onion, broccoli and bacon and spread cheese in the pie crust, then pour egg mixture on top. Bake for 40 to 45 minutes until top of quiche begins to turn brown.
I wrapped it with parchment paper and twine and I made a printable baking label. It's my label!! How does it look?
