Moringa Cookies - Icebox Cookies



How to make super simple cookies using moringa leaf powder?
It is a cookie made with moringa powder from the miracle tree! I want to eat cookies every day, but I want to eat a little healthier. I make sweet things with moringa powder. Moringa cookies have a similar smell and taste to green tea cookies. In addition, there is more protien, calcium, vitamins and zinc than green tea. There is no doubt that the pure Moringa Tree leaf is the source of incredible health benefits. It’s the ultimate, natural, organic, energy and endurance health supplement - moringa is overflowing with health benefits, 7 times the vitamin C in oranges, 4 times the calcium in milk, 4 times the vitamin A in carrots, 2 times the protien in milk, 3 times the potassium in bananas. It is easy to make these super food cookies! Because they are icebox cookies they are indispensable for the busy or lazy baker.  Keep a batch of cookie dough on hand for instant sweet things!

Ingredients


1+1/2 cup                                       whole wheat flour                 
1/2 C                                               confectioners sugar ( I reduced 10%)
8 Tbsp                                            unsalted butter (room temperature)
1/4 tsp                                             salt
2                                                      yolks
1 tsp                                                vanilla extract
2 Tbsp                                             moringa powder
1/2 C                                               sliced almonds

Directions
Combine whole wheat flour and moringa tea powder and sift into a bowl. In a stand mixer with the paddle attachment or in a bowl with a hand mixer, beat unsalted butter until smooth and creamy. Add a pinch of salt and blend well. Add confectioners sugar and blend until soft and light. Add 2 large egg yolks and mix well until combined.Gradually add the flour and moringa tea powder mix and blend until the dough is smooth. Add sliced almonds and blend well. Cut the dough in half and shape into 2 cylinders, about 1.5 inches diameter, about 7" long.Wrap the logs in plastic wrap and chill in refrigerator until firm, at least 3 hours or overnight.Preheat the oven to 350 F degrees and line the baking sheet with parchment paper.
Remove the dough from the plastic wrap, and with a sharp knife, slice the dough into ⅓ inches (7 mm)-thick rounds
Place them on the baking sheet and bake the cookies at 350 F degrees for about 15 minutes, or until the edge of the cookies start to get slightly golden brown.

BBQ - Bulgogi with Fish Sauce

Think bulgogi takes a long time to make? Not with this recipe.
When I think about Korean bulgogi, I always think about beef with soy sauce. This bulgogi recipe does not use soy sauce, just fish sauce. The original bulgogi recipe should be marinated for a long time. But it is not needed.  Wonder why?
While I was watching a Korean TV show, I found a special recipe. The program's name is 'Mr. Back, the homemade food master.' The dish in the photo above is bulgogi with fish sauce. The smell and look of this food is similar to regular bulgogi. But the deep flavor that I did not recognize was from the fish sauce. If you are bored with the taste of ordinary bulgogi, try this recipe.

Ingredients
1/2 lb sliced beef short rib
2 T coconut sugar
2 T fish sauce
1 T minced garlic
3 T chopped green onion
1 C sliced sweet onion
1 T sesame oil
1 t sesame seeds

Directions
Put meat in a bowl with coconut sugar and mix well - coconut sugar makes the meat softer.
Then put garlic, green onion, onion and fish sauce in the bowl and mix well. Add sesame oil.
Heat a large nonstick skillet over high heat and add all the meat mixture to the pan. 
Cook, stirring constantly, until most of the liquid has evaporated and meat begins to brown around the edges. 
Serve with sprinkling of sesame seeds.

Korean Braised Chicken with Spicy Soy Sauce

Do you see the transparent noodles in this dish?
When my friend visited my house she brought Korean glass noodles. Of course, I can buy glass noodles at the Korean grocery store, but she brought them from Korea and they have a special shape - they are wider and flat. So the noodles absorb more sauce. The texture and taste are better. 
I thought about what I would make with these noodles and then I made braised chicken with spicy soy sauce. I was able to cook it easily with pepperonchino which adds a spicy taste, and rice wine which gets rid of the chicken smell. And I used coconut sugar instead of white sugar to make it sweet and glossy. Coconut sugar is one of my favorite ingredients, because it is low in calories and tastes good.
The directions are the same as my previous recipe, but I changed some ingredients.

Strawberry Tiramisu

My friend from Korea visited my house a few weeks ago. I was so excited! 
She went to New York for 3 days. So I made a strawberry tiramisu while she was not at my house. I hoped she would like it.
I have made strawberry tiramisu once before. At that time, I cut the strawberries in half, but this time I sliced them thinly to make it easy to eat. Of course, it was much easier to cut the tiramisu.
After 3 days, I shared it with my friend and her daughter. On that day, we ate bbq at home and I served the strawberry tiramisu as a dessert. My friend liked that it was a homemade dessert, and it was not too sweet. She had already experienced too many sweet desserts while traveling to New York.  I think regardless of whether my dessert was too sweet or not, she would have liked it.  The sweetness level was good for her. Ha ha ha!
