Korean Spicy Cold Chewy Noodles - Jjolmyeon 쫄면

 I made a popular Korean noodle dish, Jjolmyeon last weekend. This is one of my favorite dishes to order at Korean restaurants when I was in high school. So it's one of the memories of my school days. Jjolmyeon is Korean dish of cold, spicy noodles. The noodles are very chewy and spicy - chewy, bouncy textured noodles and crunchy and refreshing vegetables are perfect for me. 
In Korean the word Jjol means very chewy and myeon means noodle, in other words, Jjolmyeon means chewy noodle. It's a good texture for me because I like Korean rice cake.
If you want  a fantastic and refreshing weekend lunch like me, start making this Korean chewy noodle dish.
Let's get started!

Ingredients (for 2 people)

Sauce
4                                           mini cucumber
1/5                                        orange, cleaned, not peeled
1/8                                        onion, cleaned
1 clove                                 garlic
4-5 T                                    Korean hot pepper paste
1 1/2 pack                            truvia
2 T                                        apple cider vinegar
1 t                                         sesame seed

Garnish
1                                            mini cucumber, cleaned and julienned 
1/6                                         green  cabbage, cleaned and thinly sliced
2 C                                         Korean  bean sprout, cleaned
sesame and perilla oil to taste

2 pack                                    Korean chewy noodle, Jjolmyeon noodle

Directions
Mix cucumbers to a pulp in a food processor. Put in a sieve to drain water.
Put into the food processor the orange, onion, garlic  and mix to a pulp. 
Add stevia, vinegar, Korean hot pepper paste and the orange mixture to the drained cucumber.
Prepare the noodles. Blanch the bean sprouts.
Refresh the noodles and bean sprouts in cold water - cold water makes them  more chewy and crunchy.
Pour cucumber mixture over the cooked noodles and top with garnish.  
Drizzle with sesame and perilla oils and sesame seeds to taste.

Sweet Potato Noodle with Zucchini noodle

This original recipe is from Korean Japchae, but I wanted to reduced the amount of carbohydrates, I mixed in zucchini noodles.
When I made the zucchini noodles, I used VEGGETTI's spiral vegetable cutter. It is the fast, easy way to turn vegetables into delicious things like noodles. You can make fancy veggie noodles just like an upscale restaurant.
Japchae is one of  the most popular and common traditional Korean foods - combining noodles, veggies and eggs tossed in a sweet soy sauce.  Also, it is a go to dish for holidays and special occasions, like having people over for dinner. One of the ingredients of this food is dried sweet potato noodles, which may be unfamiliar to you. But, dried sweet potato noodles can be found in most Asian grocery stores. They are incredibly chewy, but healthy and delicious.
My homemade Japchae is easy and delicious. It's loaded with healthy zucchini and mushroom. Enjoy!

Ingredients
8 oz                                   dried sweet potato noodles (Japchae noodles)
1/2                                     bell pepper
1/2                                     onion, thinly sliced
4-5                                     mushrooms, sliced
1 1/2 T                               vegetable oil
1/4 lb                                 beef, sliced 
1                                        Zucchini
1/2 t                                   sesame seeds
1 C                                    spinach, cleaned
salt to taste

Sauce
4 T                                     soy sauce
2 T                                     coconut sugar
2 T                                     water
1 t                                      white wine
1/5                                     apple, grated
1 T                                     sesame seed oil
1/5                                     onion, grated
2-3 cloves                         garlic, grated
pepper to taste

Directions
Mix sauce ingredients.
Soak dried sweet potato noodles in cold water for 1 hour.
Make the zucchini noodles with the VEGGETTI.

Heat up the oil in a skillet and add onion, mushroom and bell pepper and stir-fry for 2-3 minutes.
Add beef and half of the sauce and stir-fry.
When the meat is almost done, add soaked sweet potato noodles, zucchini noodles  and spinach with remaining sauce and salt to taste.
Stir well to combine and  sprinkle with sesame seeds.

Lemon Glazed Earl grey Cookies




I can't stop making earl grey cookies. I like the crispy texture and not too sweet taste. 
I used black tea powder. The fragrance was lovely and the cookie texture was good. This is a recipe that can be easily baked by beginners, too. The smell of earl grey from the oven is very good when baking the cookies. That's why the cookies go from hand to mouth.
I reduced the amount of sugar from the original recipe and drizzled lemon glaze on the cookies. It was good.
Make a cookie that is flavorful and crispy!

How to make a lemon glaze?
1 C                                  confectioner's sugar
3/4 T                                butter, slightly melted, optional
2 T                                   lemon juice

Mix confectioner's sugar, lemon juice and butter (If you use the butter, it adds a glossy coating).

Guacamole

Is there a better appetizer or side dish than a bowl of fresh guacamole? Who can resist this wonderful green dip made from ripe avocados? This recipe is the real thing with just the right balance of avocado, onion, jalapeno and lime juice.
The most important thing about guacamole - just be sure to use perfectly ripe, good avocados - not hard and not squishy, just slightly soft. 
Cool and creamy avocado guacamole will be perfect for your dipping pleasure, or even a healthy side dish for party!

Ingredients
3                                    medium avocados, halved and pitted and peel removed
1                                    medium lime
  1. 1/3 t                               salt
  1. 1/4 t                               pepper
  1. 1/3                                 medium onion, diced
  1. 1/3                                 bell pepper, diced
  1. 1/2                                 medium onion, diced
  1. 2 t                                  jalapeno, minced
  1. 1/3 C                             spinach, chopped

Directions
Slice avocados in half and discard the seed.
Scoop out the flesh of the avocados with a spoon and place in a bowl.
Mash avocados with a fork and immediately mix in remaining ingredients.
Serve with fresh tortilla chips or as a main dish.

Pan-fried Flounder



If you want to hear cheers from a fish-loving family, make this with just five ingredients, you can make it any time you like.
One of the simplest ways possible to prepare pan-fried fish is also one of the most delicious. This pan-fried fish recipe calls for flour and cornstarch. If all you have is all purpose wheat flour, that works just as well.
What is flounder? It's a thin and flaky, delicate fish with a rather sweet seafood-like flavor. It's also an ugly little fish, because it has eyes on one side of its body and swims on the bottom of the sea. 
Here is simple but tasty flounder recipe. Serve with vegetables, a tossed salad or rice.

Ingredients
Fillets                               flounder
3 T                                       whole wheat flour
3 T                                       cornstarch
1 T                                       olive oil
1 t                                         garlic powder
1 t                                         onion powder
salt and pepper to taste

Yuja Sauce
1 T                                        yuja marmalade
1 t                                         apple cider vinegar
3 T                                        mayonnaise
Mix all yuja sauce ingredients well.

Directions
From thawed, rinse fish in the cold water and remove the water from the fish.
Heat a heavy nonstick skillet over medium-high heat.
Mix whole wheat flour and starch then coat each one in the flour mix, patting off the excess.
Put olive oil in the skillet and pan fry fish for 2-3 minutes on each side or until crispy and golden. 
Season with salt and pepper.
Serve immediately with baked egg plant and yuja sauce.

Garlic Butter Shrimps

Looking for an easy appetizer for your holiday party or family gathering?
This amazing recipe for butter garlic shrimp can be made right on your stove top in a skillet in a few minutes. It uses just a few ingredients to make an amazing, quick and easy dish - sometimes the simple recipes are the best. 
Your family will feel like they have been to a gourmet restaurant when you serve this meal at the dinner table. Ha ha ha! Also, It takes just 15 minutes to make, I always have all of the ingredients on hand - garlic, butter and shrimps...
Nothing is more heavenly than the aroma of garlic and butter! 

Ingredients
2 C                                           raw shrimps
3 T                                            minced garlic
1 T                                            fish sauce
2-3 T                                         butter
2 T                                            olive oil
2 t                                             chopped fresh parsley
pepper to taste

Directions
Peel the raw shrimps, remove the intestines and pat dry.
Put the olive oil in the pan and stir fry minced garlic until light brown.
Add the shrimps and stir fry until light pink.
Add the butter and melt and fry the garlic until golden brown. If the butter is added too early it will burn.
Add the fish sauce and pepper. 
Sprinkle with a bit of fresh parsley.
Enjoy a lot of garlic and butter flavor!
