Simple Brunch







Mashed or sliced  avocados on toast are easy and delicious for breakfast or for a snack, and can be added in many different ways for a good taste sensation. Here is my favorite way to top avocado toast. It's a quick and tasty brunch. No one will ever guess how quick and easy it is to make this gorgeous brunch - basically it was my version of heaven!
Make this. It will change your life. It's the perfect brunch in my opinion. So, start your morning with avocado and you’ll be able to handle anything that comes at you for the rest of the day. You’ll be invincible. 
And add a little bit, I recommend poached eggs to be added to just about everything. You can also add your favorite fresh herbs and even some sauce if you like, get crazy with it.

Ingredients
1                                       avocado
2                                       fresh eggs
1 slice                               whole grain sandwich bread
1 t                                     chopped onion
salt, pepper and lime juice to taste
some tomatoes or lime (optional)
dried parsley to taste

Directions
Crush avocado by fork and add salt, pepper, chopped onion and lime juice and set aside.
Make poached eggs.
Toast sandwich bread.
Spread avocado mixture on the bread and top with poached eggs.
Sprinkle dried parsley and serve with sliced tomatoes or lime.

    Avocado Bibimbap

    We've been having a few days reaching into 85, even 95℉ here in VA.  Phew!  So I try not to cook too much.  Very hot!  But this dish is super fast and easy to make and will take less than 15 minutes to put together. Sounds great!
    I made a special summer bibimbap like the picture.  Bibimbap  has always been one of the most popular Korean dishes. Traditionally, it  is made with fried egg, cooked vegetables, bulgogi(beef) and steamed rice.  However this version  substitutes sliced avocado for the beef.

    Ingredients
    1 bowl                  steamed rice
    1/2                          avocado
    1                              egg
    1 T                          coconut oil

    (seasoning soy sauce)
    1 T                        soy sauce
    1 t                         wasabi
    1 t                         water

    Directions
    Slice avocado and fry egg with coconut oil.
    Mix seasoning soy sauce ingredients.
    Fill a bowl with rice and top with fried egg and sliced avocado.
    Serve with seasoning sauce.
    If you like sprinkle with nori.

    Simple Breakfast

    I am enjoying my own breakfast.
    Today, I will show my simple breakfast.
    When I opened my refrigerator, I saw a fully ripe avocado. 
    It looked like saying "Look at me, I am ripe! why don't you try to use me for your breakfast today?"
    I had heard avocado can be used instead of butter. It has the texture of butter, but is healthier. So I started to wash the avocado.
    My breakfast was very simple.
    Toast sandwich bread.
    Slice the avocado.
    Fry an egg - I made a sunny side up egg.
    On the plate, put the toasted sandwich bread, sliced avocado and sunny side-up egg  in order.
    Enjoy your breakfast with your favorite music  :)
