This is a quick and easy, fresh quinoa recipe that I use in our house instead of rice as a side. Quinoa is a great alternative to rice - it's lighter and cooks in about half the time. Quinoa with various veggies and zesty vinaigrette make a wonderful salad. This bright and colorful salad is a great recipe. Light and citrucy, it's a whole new way to enjoy quinoa. Also, lime juice and cilantro give it a refreshing kick.

Arugula Apple Salad
I made a simple arugula salad with olive oil and vinegar. I used 'Ah Love Oil and Vinegar' - Tuscan Herb Olive Oil and Peach White Vinegar. These are produced in oak barrels for more than 12 years. So, the taste is ultra rich and fresh!
I wanted something fresh, so I added sliced Fuji apples.
It was a good balance of bitterness + lovely sweetness + nice sour taste = Very good match!!
Ingredients
1/2 apple
1 C arugula
1 T olive oil - tuscan herb
1 T vinegar - peach white
salt, pepper and dried minced onion to taste
Directions
Wash apple and arugula and slice Fuji apple as in the picture.
Mix olive oil, vinegar, salt and pepper well.
Sprinkle salad dressing on the arugula and arrange the sliced apple.
Sprinkle with dried minced onion.

Watermelon Salad

Let's stay cool this summer with
Delicious Watermelon.
After all, there is nothing like a slice of cold watermelon on a hot day!!!
Use watermelon with your dinner.
I made a simple salad with olive oil and vinegar.
The vinegar I used is Ah Love Oil and Vinegar-
Green Apple White Vinegar.
It was produced in oak barrel for more than 12 years. The taste is ultra rich and fresh.

I am excited to try the White Peach and the Lemongrass Mint Vinegar.
